Traditional Welsh Bara Brith tea loaf
400g mixed fruit (e.g. sultanas, raisins, currants)
300ml strong hot black tea
1 teaspoon mixed spice
250g self-raising flour
100g dark brown muscovado sugar
1 x free range egg, beaten
Honey to glaze
1. Put dried fruit in bowl, pour over hot tea, mix in sugar, stir well to dissolve and leave to soak for at least 6 hours or overnight
2. Next day, sift flour and spice into the soaked fruit (do not drain the tea), stir in egg and blend well
3. Preheat oven to 180c/gas 4. Line a 900g loaf tin with baking paper and pour in the mixture
4. Bake for approx. 1 hour until cake has risen and cooked through. Leave to cool on a rack, drizzling a little honey over the surface of the warm loaf for a glazed topping.
5. Wrap and store for 2 days before eating. Served sliced with butter.

224g (8oz) butter
224g (8 oz) currants
56g (2oz) ground almonds
56g (2oz) split blanched almonds
224g (8oz) caster sugar
224g (8 oz) raisins
Grated rind 1 orange
4 eggs
112oz (4 oz) mixed peel
3tbsp milk
280g (10 oz) plain flour
Pinch of salt
56g (2oz) glace cherries chopped
Cream butter and sugar until light and fluffy.
Beat in eggs one at a time
Fold in sieved flour and salt
Stir in the remaining ingredients apart from the blanched almonds and mix well
Place the mixture in prepared 23cm/9in tin
Arrange blanched almonds on top of mixture
Cold start - bake at 140* (fan) for 1hour 45 mins to 2 hours 15 mins

Adult Cups and Trophies are presented at the ANNUAL GENERAL MEETING, therefore trophies should be returned to the committee by mid October.
